Update most recent known api versions in shopify_python_api for graphQL users

Overview/summary

Currently we are unable to use the latest versions of shopify API due to this library being out of date.

Motivation

Company i work with is receiving emails that they need to update versions to 2025-04 to support the new market releases by end of H1.

Shopify_python_api is currently limited in "known versions" to 2024-10.

Hi there 👋

With this PR there no longer needs to be a constant added for you to use the most recent API version. Instead you can pass the string API version that you want to use.

For example the following is working for me

Won't this require the whole plugin to be updated to GraphQL by default as well? Currently it still depends mainly on REST which has been abandoned by Shopify API meaning all plugins should be based on GraphQL. Right now this plugin is not consistent with the requirements and was also removed from the "community maintained packages" in official Shopify docs. Is this repo still maintained by its authors or should it be forked to be continued by someone else?

Could you clarify? Are you not able to make a REST API call using the above approach?

I can, but...

The REST Admin API is a legacy API as of October 1, 2024. Starting April 1, 2025, all new public apps must be built exclusively with the GraphQL Admin API.

Thank you for clarifying. Yes, while this package can make both REST and Graphql API calls I recommend deferring to that information to understand if your particular app can access the REST API.

If you have a specific issue, or feature request with this package could you please create a new issue?

For more general feedback regarding our APIs I would recommend creating a post in the developer community forums, that will get flagged to the API ownership teams.
